What is Celiac Disease?

Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food.

  1. This is all well and good, but it irritates me that you don’t allow people to use coupons on the gluten free pizza. It seems like you’re not ALL that concerned about it or you would treat people equally who have a gluten intolerance, not as a money-making scheme.

      We are sorry that this item is not discounted more often. We have priced this at a point where we do not expect to make any profit. Our intention is to offer it to our guests who are otherwise unable to enjoy pizza. We do appreciate your feedback.

  2. I don’t live in an area rife with Monical’s, but whenever we come downstate, the boys and I make going to Monical’s a must. We love your gluten free pizza. I love having a tasty GF pizza that I don’t have to make myself. (The frozen ones from the grocery store are kind of mushy.)

  3. Wondering if you cook the gluten free pizza in a sepatate overn? I’m concerned about cross-contamination.

    • Mr. Brink,
      While we are not a gluten free facility we are very aware of the need to avoid cross contamination. To insure the safety of our guests, we have implemented strict controls over the gluten free product preparation process. The doughs are prepared off-site in a certified gluten free facility and sent to us frozen, each dough in it’s own individual pan. The doughs remain frozen until ordered. They are prepared at our pizza preparation table using only utensils and ingredients which have not been used to prepare regular pizzas. The gluten free pizzas, still in their individual pans, are placed into the pizza ovens and cooked. They are then removed from the oven, placed on a cleaned and sanitized cutting board and cut using a special cutter only used for gluten free pizzas. The pizzas are then either placed on clean pizza pans for table service or new pizza circles for carry-out or delivery orders. At no time are the gluten free pizzas allowed to come into contact with items or products used to prepare our “regular” pizza products.

  4. I have celiac disease. We go to your monical’s pizza store in Centralia Illinois. They have been wonderful to make sure everything is done right. I thank you for having a pizza I love!!! It is my favorite place to eat. Thanks again

      Water, Rice Flour, Modified Rice Starch, Potato Starch,
      Olive Oil, Evaporated Cane Sugar, Tapioca Flour, Fresh Yeast, Salt, Xanthan Gum, Calcium Sulfate

  5. Can you tell me all of the ingredients in the gluten free crust? For example do you use eggs, corn, citrus, or dairy in the crust.
